Wondering about Wheat

In my experience, a lot of people have “wheat sensitivity” in the US but often have no problems eating wheat products overseas – and the author of this article notes the same experience, and other practitioners out there would certainly agree.  It seemed clear to me that it was something to do with either chemical fertilizers used here but not there, or some part of the process.  Now we know:
